Earlier this summer, I was looking for something to take a burger up a notch. Not just the old ketchup, mustard, mayo thing …. or the KC style BBQ sauce for a Western Burger. I started with this copy cat Shake Sauce, an imitation of the sauce used at the Shake Shack. But I knew it was going to be sweeter than I prefer, so I started tuning it to get what I was looking for. I call the end result of this great burger dressing: Smash Sauce.
Use it on steakhouse burgers, smash burgers, diner burgers, or my easy weeknight burgers. You’ll love it. Use it for your fries instead of ketchup!
A couple quick notes about the recipe. First, as always, I recommend making it once my way. Then you can start tuning and making it your own. This recipe is intended to be a bit tangier and not as sweet as many other “special sauces”. That’s why I use Best Foods Olive Oil Mayonnaise, not Hellman’s Mayo or Miracle Whip. Using tomato paste plus honey results in a bit more savory and a bit less sweet than using ketchup. Give it a go!

Ingredients
1/2 cup Best Foods olive oil mayonnaise
1 tbsp + 1 tsp dijon mustard
1/2 tsp tomato paste (I keep a tube of Cento in the fridge for this kind of thing)
1 tsp honey
1/8 tsp kosher salt
1/4 tsp garlic powder
1/8 tsp fine ground black pepper
1/4 tsp celery seed – crushed in a mortar & pestle or coffee grinder
1/2 tsp dill pickle brine
pinch of cayenne pepper
Method
Whisk the ingredients together in a non-reactive bowl (plastic or glass, no metal). When well incorporated, cover and refrigerate for an hour before serving.
Use about 1 tbsp on a burger (that is the calculated serving size for nutrition info)
